I'm the kind of mom who loves to cook, and try out new recipes to feed my family. Nothing makes me happier than supper meals, as they are the one time each day my family is guaranteed to be together. REVIEW:
I wanted this book because I married Italian and we eat a lot of Mediterranean foods already. I just wanted better knowledge and more recipes to deal with. When I browsed through, the hubby chose this Italian bread salad for me to make.
Panzanetta
This 'bread salad' is called Panzanetta. It's generally made with leftover ciabatta bread, plum tomatoes, red onion, cucumber, and some herbs, oil, vinegar and spices. I wasn't sure I would like it, but it was surprisingly delicious! For my first time having it, I was surprised at the great flavor and texture. The bread didn't get soggy, it just absorbed all the flavors. I can't wait to make it again and again, plus try much more out as well.
I also loved being able to use herbs from my indoor garden. That was a nice touch.
I definitely recommend this book and the series of cookbooks it fits with. I think I have them all!
